Aqua Fava Orange Macaroons (Vegan)
Orange Zest Macaroons
Using Aqua Fava (bean brine from the can of chickpeas)
Aqua fava is the bean brine from a can of chickpeas - Don't tip it out!

Preheat the oven to 180 degrees celcius.(180 degrees fanbake/ 390 Farenheit)
INGREDIENTS
120ml Aqua fava (bean brine from a 400g can of chickpeas)
175g sugar
300g ground almonds
1/4 tsp fine sea salt
zest of one lemon or orange
1 tsp vanilla essence
50g icing sugar.
Optional additions
instead of 300g almonds - you can use other ingredients to add up to the 300g like:
Ground sunflower/ almond; or ground coconut
1/4 cup of chopped dried apricots
METHOD:
In a large bowl, whisk the almonds, sugar and salt.
In a second bowl using an electric beater, whip up the aqua fava for 8-10 minutes, until it forms semi-stiff peaks.
Line two oven trays with baking powder. Gently fold the aqua fava, lemon zest and vanilla into the almond mix..
Now set up the biscuit rolling station: Shake the icing sugar into a shallow bowl and put the dough to one side of it and the trays to the other.
Pinch off a walnut sized piece of the biscuit mixture, gently roll it inot a ball, then put in the icing sugar and repeat until you have about six in the bowl. Shuffle the bowl around in a circular motion to cover them thickly in icing sugar.
Carefully place them 10cm apart on one baking tray and repeat until you have used up all of the dough.
Bake for 15-20 minutes. Until they are golden on top. Remove and set aside to cool.
Or sometimes we turn the oven off and leave them in the oven to cool - so they go chewy!
Keeps for a week in an airtight container... but we have usually eaten them by then :)
